Super Fruit Bake

A custardy puffed pancake with apples, or peaches & blueberries or other fruit in season. Whipped cream, maple syrup or other syrup makes a great accompaniment.

3 tblsp. Butter
2 cups Peaches & Blueberries, or 4 large apples peeled & sliced.
6 Eggs
1 1/2 cups Milk
1 cup All-Purpose Flour
3 tblsp. Granulated Sugar
1 tsp. Vanilla
1/2 tsp. Salt
1/2 tsp. Cinnamon
3 tblsp. Packed Brown Sugar

Melt butter in a 13" x 9" baking dish in 425o oven for about 3 minutes...swirl to distribute. Arrange fruit in single layer in butter, bake until butter is sizzling but not browned. (about 5 minutes)

Meanwhile, in bowl, beat eggs, milk, flour, granulated sugar, vanilla, salt and half of the cinnamon and pour over the fruit. Sprinkle with brown sugar and remaining cinnamon.

Bake for 20 minutes or until puffed and golden. Serve immediately....Makes 8 servings
